Recipes, modifiers and kitchen tickets

Coffee with a milk choice and a flavor, a baguette with no onion, paid extras, sizes that share options and the ticket for the bar and the kitchen.

Updated on October 25, 2026

Made to order or made beforehand

First decide how each product leaves stock, with the item's Inventory item checkbox.

  • Made to order (a coffee, a baguette assembled when ordered): the item is not an inventory item and has a recipe. When sold, its ingredients leave stock: the recipe's, minus what was removed, plus what was chosen, each with its portion.
  • Made beforehand (bread or sandwiches that arrive ready from the commissary): the item is an inventory item. It is produced with a production order at the commissary and transferred to the branch. When sold, the item itself leaves stock; its recipe is not deducted again.

If something is added at the counter to a ready-made item (extra cheese on a sandwich), tick Deduct even if the item is ready-made on the extras group: the sandwich leaves stock and so does the cheese.

The recipe and the modifiers

On the item, Recipe & modifiers tab:

  1. Recipe or fixed components: what each unit carries, in its inventory unit (18 g of coffee, 1 cup). Tick Can be removed on the onion or the avocado so the POS offers “No onion”. What is removed does not leave stock. If removing it lowers the price, set Discount if removed (usually 0).
  2. Modifiers: groups asked when selling.
    • Choose 1: “Milk”, minimum 1 and maximum 1. Mark one option as Default (whole milk) and the cashier just confirms.
    • Choose several: “Flavor”, minimum 0. An option taken once is ticked on and off; the rest have counters.
    • Extras: options with a Surcharge (“Extra cheese +$15”).
  3. Prepared at: the kitchen ticket station (bar, kitchen). Empty: its item group's.

The surcharge is what each chosen option adds. With With tax ticked (the usual) you type what the customer pays, 10.00, and Nori shows the amount before tax next to it; the ticket charges exactly that 10.00. It can also be the option item's price in the sale's price list (the tag checkbox), useful when wholesale and retail charge differently.

Sizes: one item per size

Coffee 12, 16 and 20 oz are separate items, each with its price, recipe (more coffee, another cup) and SAT code. To avoid entering the same options three times, use a modifier set (Point of sale › Setup › Modifier sets): “Milk” is created once and added to each size with Add shared set. Change it once and it changes for all.

A group you already have on an item becomes a set with the group's share button.

At the point of sale

  • Tapping the coffee opens the dialog with whole milk already chosen. Enter confirms; tap or press Space to change the option.
  • The price at the top already includes the surcharges with tax.
  • The line shows the choices under its name: “Almond +$10.00 · Vanilla +$12.00”.
  • To change the modifiers, tap the line and then Change modifiers.
  • Quick notes (“To go”, “Well toasted”) are set on the item group, one per line. Tap them to add them to the note, or type.
  • With Group lines, two identical coffees add up on one line; one with another milk stays apart.

Price, taxes and CFDI

The line carries one price: the item's plus the surcharges, minus the discount for removing. The tax is the sold item's. Discounts and promotions apply on that price. The CFDI carries one concept per line with the choices in its description, e.g. “Café americano 16 oz (Almond, Vanilla)”.

The kitchen ticket

In Point of sale › Setup › Preparation stations add Bar and Kitchen, with each one's printer name on the POS computer (empty: the ticket printer). Assign the station on the item group (Drinks → Bar) or on each item.

When the sale is charged, Nori sends one ticket per station with the lines prepared there, their modifiers and their note, without prices. With the print agent each prints on its printer; without it the browser's print dialog opens. You can send it again from the finished sale screen. What has no station (bottled water) is not sent.

Change its layout in Settings › Print layouts, Kitchen ticket context.

How many almond milks did I sell

In Analytics, the Modifiers sold source counts how many times each option was chosen, what the surcharges added or which ingredients were removed most, in the period you pick. Returns subtract.
